Monday Menu Plan



Recap of last week:

Friday 27: Ham and veggies

We ended up staying at friends' for dinner, but I'd already put this on, so I put it in the fridge and we had it on Monday night.

Monday Menu Plan

After a long break from both blogging and menu planning, I'm back again.

Monday: Pizza (take away)
Tuesday: Shepherd's Pie (from my awesome mum)
Wednesday: Moroccan Chicken Casserole (slow cooker) We haven't had this one before so I'm going to give it a try. I think I will serve with rice rather than couscous, because couscous scares me. UPDATE - it went well!
Thursday: Burritos
Friday: Stir fry (Hubby) Family BBQ
Saturday: Spaghetti Bolognese Family BBQ
Sunday: Scavenge

Edited to add: Half a day later and I'm already making changes! I forgot about one family dinner on Friday and just found out about another on Saturday, so a few changes to make.

Meal plan

Time to get back on it. Whenever I skip meal planning for a time, I really miss it. It's hard when I'm on my own because it doesn't seem worth it to cook for Chubs and me so I try to freeze ahead, but I'm looking forward to getting back into the swing of things.

How I do menu planning - Part 1 Dinner

How I do menu planning - Part 1 Dinner

I do menu planning almost every week. There are a few reasons for this:

- I'm not a good cook. There are some complicated things that I can do easily, but cooking is not one of those. I can't make cooking 'just happen'. I need to give it conscious, specific attention. For many years Dear Husband did practically all of the cooking. Dinner magically appeared in the evening as far as I was concerned. I realised this when Dear now-Husband was away with work. I would be sitting on the couch at 9:30pm trying to work out what this strange hunger feeling was.
- It saves time and money, and cuts down on waste.
- It means that usually, we avoid dinner time chaos.
- It almost eliminates emergency runs to the supermarket for  a missing ingredient. That said, I cook very simple meals and many of the ingredients are interchangable. This is partly laziness and partly planning.
- Some days I think I'm superwoman if can defrost something.
- It makes it easier to use planned leftovers for other meals.

I used to plan once a week, but I'm now planning fortnightly. Here's the process. It sounds quite long but I don't go through the whole thing each time.

Preliminaries:

Love your freezer.
We have no room for a chest freezer. We still have one - it's in the living room. I would recommend a freezer as useful baby equipment ahead of a cot. That's how much I love it. Freezer cooking is a whole other section, but for us it's a crucial part of meal planning.

Know your routine
After conscious experimenting, we have a routine that generally works.
Sunday night: plan meas for week/ fortnight. Blog it (see bwlow)
Monday: Grocery shopping in the day, freezer cooking and weekly prep in the evening after bedtime.
Tuesday: A work day for me, so often we aren't home until about 5:30 and there's hunger and crankiness. Then there's the toddler. Needs to be a very easy meal, almost always a freezer one.
Wednesday and Thursday: I'm home these days. I still want easy meals that are quick for me, but I can do something like crumbed chicken and roast veggies where I prep or cook it all earlier in the day and then toss in in the oven (now that we have one). I often need to take a plate to playgroup on Thursday, so I will try to have an oven meal on Wednesday if I'm making cupcakes or something so the oven only needs to be on once.

A menu plan is a tool for you; you are not a slave to it
I do try to stick to the plan, but if it's not working or we do something else then I don't worry at all. The whole point of the plan is SUPPOSED to be a reduction in stress, not an increase.

Know your meals
As I said above, I'm not a good cook. I'm someone who needs to practise a simple meal many times before I can do it reliably enough to be edible. Generally, I do meals that I'm familiar with. When we introduce a new meal I try it out a few times when it's a day when Dear Husband can chase Chubs wo I can concentrate, I do it in small quantities to see if we like it and how it freezes etc. Generally after four or five days I'll know how the meal 'works' and where it will fit best into routines.

I like to pair meals together - eg we will have chicken noodle soup the day after a takeaway hot chook. A roast is followed by a salad with meat or another 'post roast' meal.

A meal with salad is best at the start of the week before it gets wilted, and the potatoes and carrots are relegated to the tail end of the week.

We plan for meals out, leftovers, or 'scavenge' nights. I freeze leftovers if they are unexpected, so I plan to use then every now and again.

The actual process:

This, like everything on this blog, is what we do which works for our family at this time. It's certainly not a MUST DO list, but a What We Do list.

On Sunday night:
1. I see what we have. What freezer meals, meat in the freezer, veggies to be used up, things in the pantry. What needs to be used up in a few days? In a week? If needed?

2. I look at what we have on for the next fortnight. Some things (like work, playgroup) are the same every week. We live fairly boring predictable lives so it doesn't change much - generally Tuesdays are freezer Bolognese and Fridays are a takeaway hot chook. Still, sometimes there's a family dinner, a parent teacher night or something else to consider so these get popped in. I'm old school so I write these on a piece of paper - I have a booklet of weekly planning sheets that I was given - but I hear there are lots of apps and fancyschmancy things.

3. I actually plan the meals for the next fortnight and write them in. I like lots of wiggle room, so I rarely plan to use up everything. I go into 'siege' mentality sometimes...

This is the point where I try to match meals up , plan leftovers for the next meal and so on.

4. Make shopping list
I list how many of each thing I need to make the meals for the next fortnight for dinner. It's not an inclusive list - it's pretty much just dinner and anything else which can't be forgotten. I don' include things like cows' milk and eggs which we buy all the time. If there's something like bread which we usually buy but don't need that week, then I write a note saying not to buy it.

I also write a small shopping list for the next Monday when we will do a little shop with anything fresh that we will need.

5. Blog it. I do a recap of the previous week and then write my plan for the next fortnight. I link to orgjunkie.com along with literally hundreds of others. Many people list special diet plans and are great for ideas. I do find when I don't blog I get slack with the planning.

On Monday:
6. Do shopping
We shop on Mondays and somedays it goes wonderfully well. Some days - not so much. I do ind having a list helps with not forgetting things, since my brain does not work well when Chubs is screaming in it. It took me a while to work out that cranky baby almost always needed to eat food. MOTY there...

7. Do freezer cooking
Monday night after Chubs is in bed is my prep night. I will usually cut and crumb chicken and make a triple batch of Bolognese or chilli con carne. I also do sandwiches for lunches, cut up fruit etc. For our family it works well to invest Monday night doing this for the benefits of having everything ready later in the week.

Throughout the week:
8. Change as needed. We rarely stick to the plan as you can see - actually I don't think we've ever done it! I scribble over the sheet on the fridge as we go (which also makes blogging the next week easier.)

Next Sunday night
9. Look at the plan for the following week. Change as needed (and it's always needed). Update mini shopping list. Blog.

Next Monday
10. Do a little shop, and then any freezer cooking, sandwiches etc that night.


This is by no means a perfect system. We don't always go shopping every Monday, sometimes we don't need to. I still go to the shops during the week for more cows' milk and fruit. As I said above, we rarely stick to the plan totally. We still have scavenge nights. We still have breakfast for dinner occasionally - sometimes planned, sometimes not. I much prefer to spend my energy planning in the evening when I want to, when it's calm and before things go pear shaped than I spending energy at 5 o'clock with a screaming toddler clawing at me. Either way meal planning is going to take time and energy - I prefer to do it on my terms.

There's plenty of wiggle room built in and I do like to have quite a stash so I rotate long storage food. We still have the occasional 'what about a pizza?' nights, and Chubs still loves the prepackaged baby food pouches (six months + still counts at 24, right?)

Menu plan

Last week's recap:

As per usual the plan didn't work out. The spanner in the works was Dear Husband getting quite ill and needing a lot of emergency dental work. It appears he's had a number of tooth infections for quite some time (which we didn't know about). Two flared up last week and have been removed, with more work to come. He was quite sick with both the infection, and then the recovery so things went out the window this week. Mother in law has also been visiting so everything is a bit out of routine.

Monday 27/5 Crumbed chicken and roast veg (also do daycare cupcakes) All good

Wednesday 29/5 Chilli con carne (make large batch to freeze, eat one serve each tonight) Didn't happen, we scavenged that night.

Saturday 1/6 Slow cooker chicken curry I knew that it would be a busy day - I had a book club meeting Saturday afternoon, picking up MIL etc. I put the slow cooker on at lunch time, and it was a great to walk in to a hot dinner ready to go at dinner time!
Sunday 2/6 Scavenge After a massive day and feeling under the weather, take away pizza won the day.
The plan for this week:

Monday 3/6 Chilli con carne with rice, corn chips and salad I'm posting this Monday night, and so far do good! I also made three lots of Bolognese for the freezer
Tuesday 4/6 Asian chicken noodle soup MIL wants to make silverside, and I'm totally letting her!
Wednesday 5/6 Parmesan chicken with roast veg Heading out to dinner - a rare treat!
Thursday 6/6 Stir fry Parmesan chicken with roast veg - I'll bring this over from Wednesday
Friday 7/6 Hot chook with chips and steamed veggies Bolognese (We can't go all week without it!)
Saturday 8/6 Stir fry
Sunday 9/6 Scavenge

Menu plan



Well, plans have a habit of not quite working out that way... :)

Here's the updated version of what we were supposed to eat last week:

Monday 20/5: I've changed this to chilli con carne with rice, corn chips and salad since we didn't have the hot chook last night (was Asian chicken noodle soup ) All good
Tuesday 21/5: Spaghetti and rice Bolognese (freezer) I've started putting red kidney beans in the Bolognese too. All good
Wednesday 22/5: Stir fry Silly me - I was trying to be prepared and got the frozen Bolognese for Tuesday night out of the freezer on Monday night and put it in the fridge to defrost. Totally forgot about this on Tuesday, and got a new one out of the freezer. So, we needed to use up the one in the fridge so we had Bolognese again.
Thursday 23/5: Crumbed chicken with roast veggies (instead of parmesan)
I was coming down with a cold on Thursday (which is still hanging on) and the idea of doing a roast just didn't happen. Freezer Bolognese again.
Friday 24/ 5: Spaghetti and rice Bolognese (freezer) After Bolognese three nights in a row, we were getting a little over it so we got a takeaway hot chook which is a bit of a Friday night favourite.
Saturday 25/5: Stir fry Since we had the hot chook on Friday, we did Asian chicken noodle soup. It hadn't been planned so I bought some fresh pak choy on Saturday morning but forgot the chicken stock. We usually use the liquid tetra stuff, but I had to run up to the corner store which only had stock cubes. There were an acceptabel substitute, but we do like the liquid tetra packs better.
Sunday 26/5: Scavenge A last minute invitation from my mum for early dinner was accepted with much enthusiasm! 


Plan for the next fortnight:

Monday 27/5 Crumbed chicken and roast veg (also do daycare cupcakes)
Tuesday 28/5 Bolognese

I've been a bit slack with meal planning, but hoping to get back into it for the next little while. I'm also going to start planning fortnightly as we're going to change the way we do shopping. I'm also planning a lot more specifically (including writing two shopping lists). We'll try this for a little while and see how it goes - stay tuned.

Menu plan



It's a bit late, but here is this week's menu plan. I am enjoying actually planning meals and using our new kitchen, rather than just dragging ourselves through the monotomy of constant hunger-avoidance.

Last week:
Monday: Stir fry Instead I tried a new recipe - combination noodles, which was like an Asian chicken noodle soup. Dear Husband loved it and I thought it was ok, so it will probably become part of the regular rotation
Tuesday: Scavenge (I have a work function) I ended up cooking chicken bolognese on Monday night, and then we reheated for Tuesday night.
Wednesday: Bolognese (from the freezer) Dear Husband made stirfry
Thursday: Roast beef I really can't remember what we had, but it wasn't roast beef!
Friday: Roast beef leftover and salad Bolognese I think
Saturday: Chicken curry (from the freezer) We had family over on Saturday and were too stuffed to eat on Saturday night!
Sunday: Chicken bolognese Combnation chicken noodles

So, we didn't actually stick to it! Better luck this week!

Monday: Freezer bolognese + brussel sprouts and bacon bits
Tuesday: Stir fry - new recipe + brussel sprouts and bacon bits

Sewing/ craft tip and menu plan


Sometimes splitting up a big project into smaller sections which can be done during nap time is the only way to get any crafting done.

One way to do this is to cut out on one day, and then put it away to be sewn the next day, or the next week, or the next year.

The problem is, I have a mind like a sieve. So I need to label every piece, every partly done item. Write in on a piece of paper and pin it, with super detailed instructions. Makes much more sense when I pull it out again.


I haven't done menu planning in a long time, but I'm keen to get back into it. Especially now that we have the new kitchen, I'd like to try out some new meal which still suit my dead easy, cheap and healthy requirements.

Menu plan for this week:

Monday: Stir fry
Tuesday: Scavenge (I have a work function)
Wednesday: Bolognese (from the freezer)
Thursday: Roast beef
Friday: Roast beef leftover and salad
Saturday: Chicken curry (from the freezer)

Lemon herb chicken

We tried another meal tonight in my new kitchen experimentation plan. I'd been looking forward to making a lemon chicken, even though Dear Husband wasn't keen on fruity flavours with meat.

I'd looked at a few of the cook in bag kits to ease myself in, but a quick glance of the ingredients list and I saw that it was choc full of preservatives. Even for a domestically challenged person like myself, I figured I could do better.

I tried this recipe, and the verdict from both Dear Husband and me is that it wasn't great, but it has potential and is worth tweaking. I think it will end up on our regular rotation.

Here's what I actually did:

Ingredients
Chicken
- two small chicken breasts, cut into large strips
- 1/4 cup lemon juice
- 1/4 cup honey
- 1/4 teaspoon chopped chives (dried)
- 1 teaspoon chopped parsey (dried)

Vegetables
- 1/4 butternut pumpkin
- 2 carrots
- 1/2 sweet potato
- 3 medium potatoes
- avocado oil

Method
1. Wash, peel and chop veggies. Parboil for five minutes. Toss in oil.
2. Put in oven at 190 degrees Celsius for 25 minutes
3. Mix honey, lemon juice and herbs.
4. Chop chicken
5. Put one teaspoon of flour inside an oven bag and shake.
6. Put chicken and marinade into oven bag. Tie off and shake around. Continue to toss while veggies are roasting.
7. After the veggies have been in for 25 mins, add the chicken for another 20 mins.



What needs to change:
- I didn't preheat the oven, because things were toddler-nuts when I was putting it on and I wasn't sure if I would be able to get it started when I wanted to. This means that the actual cooking times were probably less.
- The veggies still aren't right. We've been experimenting with the roast veggies but each time I feel like the need to go in longer. Next time we will try cooking for 90 minutes or more to really crisp them up. It also needs some steamed green beans or something green and light - all the carb-y roast veggies are very heavy
- The chicken was cooked through but could use more time to crisp up. Another option might be to cook it uncovered, instead of in the oven bag.

What was good:
- The chicken was yummy! Dear Husband doesn't usually like fruity chicken meals, but he liked this one. If we crisp it up a bit it will be great.
- It's very easy to make. It's super easy to put it in the oven; actually I'm suprised that I was happy without a working oven for so many years. It's very toddler friendly to put something in the oven, block it off for safety and then eat later than it is to stand over the stove cooking something in the pan. It wouldn't be a good meal to do on a work day or when we were out all day - I'm not walking in the fdoor at 5:30 and starting a meal that will take hours to be finished. There was probably only about 15 mins of prep (max) but a lot of potential for things to go bad if there were any interruptions or delays. I'm a bit funny about freezing chicken meals, but it would be a good on-the-day meal. A good plan would be to 1) plan ahead so that I had the ingredients, 2) cut up the veggies, make the marinade etc at nap time and then 3) put the veggies on at 4:30ish , and then the chicken on an hour or so after that.

This is certainly an easy meal, but it would require planning. I think that we need to go back to meal planning, which is something that I stopped doing - pretty much because all we ever ate was spag bol and stir fry. I'm going to start planning again, and hopefully introducing a bit more variety. I'll still have my freezer stash of bolognese for crazy evenings (or weeks) as a fall back plan or a planned easy night, but hopefully they will stop being such a regular feature (although I do love spag bol - thank goodness!)

Monday mind thoughts

Another week, another list of why Chubs is so awesome. We had two parties this weekend and she charmed her way through both of them. Slime, watermelon, dragon cakes, pass the parcle and someone's child streaking. (Ok, it was my child streaking. Don't pretend you're suprised!) Happy birthday Smidge and the warmest of blessings to my friend who is expecting the arrival of her precious bub in the next few weeks.

I have so many posts planned and half written in my head, but I never seem to have the time or clarity to write them down. Hopefully some will make it though soon!

Menu plan + return to study


Well people, it's official. As of tomorrow morning, I am a student again. I'm starting my postgrad studies and I've spent the afternoon printing out my course profile and study guide, organising my new stationery and freaking out over what I've gotten myself into.

I think that I'm getting less excited amnd more apprehensive with every 'first day'. I remember before I started school as a child I was desperate to get to school and learn. I kept asking my mum when I would learn to read. She said I would learn to read when I went to school. I kept waiting and waiting all day on my first day of Grade One - was this the bit when we would learn to read? What about now? I still remember my shock and dissapointment when, at about 3:30, I realised that 1) I have been to school and 2) I couldn't read yet. I promptly burst into tears - I couldn't read yet and my mum had said something that wasn't true.

When I started high school I was excited, very nervous but keen to get started. A whole new world of not only classes but extra curricular activities, timetable, lockers, textbooks and moving rooms for each class(!) awaited, and I was very excited.

By the time first year uni rolled around, I was jumping up and down with excitement too, but of course I was trying to be cool and not show it or look like a first year. You know, the one with a big map who was underage and didn't know where to go and was heading to the first year chem lecture with 1499 other students.

So, now my first day of post grad awaits. I'm much, much more nervous this time. Previously, it was all about me. If I stayed up all night studying before, it only affected me. This time around I have a husband and a toddler, and my actions affect them. I can't just do what I want, when I want. I can't stay up as long as I want and study as hard as I want. I'm panicking a bit, and I hope that all will work out. I don't want to spend hours at my desk since that means time away from Chubs and DH, but at the same time I want to make a really good go of my study, or else there is no point doing it.

So, with apprehension, anxiety, excitement and brand new stationery - here we go!

Rainbow party bags + menu plan

For Chubs' first birthday we had a rainbow party - check out some of the food and decorations here.

For the party bags, I wanted something that wasn't just a bag full of sugar. I have a family full of dentists to start with, but also many of the party guests were little babies so lollies weren't really appropriate.



I made a whole lot of drawstring bags with this rainbow fabric on one side and a plain colour on the other. I split the bags up into three categories - babies, little kids and older kids. Babies got the bag, some bubbles and a foam bath toy. Little kids got the bag, a few lollies, playdough and some small plastic dinosaurs and older children got bubbles and some lollies. The bags were bigger than a normal party bag - about 30cm wide and 35cm tall - because I wanted them to be useful, not just cute.



I thought I took a photo of the rainbow playdough, but I can't find one. Basically I made up four batches of white (uncoloured) play dough, then I split it into six even balls. I coloured each ball one of red, orange, yellow, green, blue and purple then I kneaded and kneaded and kneaded and kneaded! (My hands were quite sore afterwards - you really can see why it's good for muscle development and find motor skills for little kids - and big people, too!) Then I rolled each colour into a thick sausage and cut it up into ten pieces. I then put one piece of each colour in a sealy/ ziplock bag.

Since the bags had different things, I named each bag just by stapling a piece of card with the child's name on it. There were a few sets of siblings invited so I made sure that each child got a different coloured back so they could tell them apart.



Many mums at the party thanked me for playdough which kept several kids occupied for a few hours that afternoon. The bags were useful too, and I've seen a 'in use' since the party which was exactly what I intended, so I'm glad they've been enjoyed.

Menu plan for this week

I need to have some tests on Friday which means I need to have a special diet for three days before - lots and lots of carbs! So here's the plan for a high carb diet this week. Depending on what the results show it may very well be my last flirtation with carbohydrates, so I'm going to enjoy it!

Monday: Pork stir fry (plus I'll try to do some freezer cooking)
Tuesday: Spaghetti bolognese
Wednesday: Spaghetti with chicken bolognese (made the same as normal but with chicken mince)
Thursday: leftovers from Tuesday and Wednesday and a big bowl - perhaps my last - of spaghetti! I do love spaghetti.
Friday: We are going out to a birthday party for a relative so we'll eat there
Saturday: Out with other rellies
Sunday: scavenge.

Megapixel Monday

We're off today to check out some professional family photos which we had taken earlier in the month. I'm so excited to see them!

Meal plan

Last week:
Monday: Slow cooker chicken dish I want to try I forgot the cream for this, so it didn't happen. We hade Steak and veggies I think.
Tuesday: I'm at my work function so Dear Husband will have something from the freezer
Wednesday: Steak and veggies I can't remember if we did this or not...
Thursday: Freezer Bolognese I cooked up new Bolognese from frozen mince, and Dear Husband had it for dinner on Friday night too.
Friday: I'm out so again Dear Husband will sort himslf out. See above

Monday musings

Well, our fortnight of 14 family events has drawn to a close and I think I can draw breath now before the next lot begins! This week I have a work function on Tuesday night, then Wednesday is a public holiday for ANZAC Day.

I spent a lot of time making kindy sheet sets over the last week. I think that a good way to maximise my time is to cut a lot of sheets out in one go, then sew separately. I had some Chubs free time this week to sew, but I spent much of it cutting and pinning. Cutting and pinning is something I can do when she is napping or asleep for the evening, but I really need her out of the house to sew since the sewing machine wakes her up. I got 14 sheet sets cut out and pinned on Saturday night, so I can sew them next time.

The laundry system fell down last week but otherwise seems to be going well. It's still the putting away that it the rate limiting step.

I did get a chance to go bridesmaids dress shopping Chubs-free on the weekend. We think we may have found a dress that suits the six of us (eeeep!) and will suit the bride's dress and the boys, too, but there's at lease one more shopping trip in store. It was heaps of fun though and we did see some beautiful dresses.



You know, I really don't know why I do meal plans, since I don't think we've stuck to one yet! Last week's plan:
Monday: steak and veggies - yes, the only meal of the week we stuck to the plan on!
Tuesday: Bolognese I have no idea what we ate on Tuesday, but I don't think it was bolognese. I will keep thinking... ETA It may have been steak.
Wednesday: out Nanny Tops came over to babysit so she had some freezer chicken curry and we had Thai at the restaurant for our family function.
Thursday: slow cooker chicken curry - I cooked up some Bolognese during nap time, but Dear Husband came home with a hot chook from the shop. This is exactly what the meal plan is supposed to avoid. We ate the chicken on Thursday night and had the Bolognese on Friday night.
Friday: chicken stir fry See above
Saturday: hot chook from shop Steak and veggies since we found a big pack of nice steaks at the shops
Sunday: beef stir fry Steak and veggies, we had steak left over from Saturday

This week:
Monday: Slow cooker chicken dish I want to try
Tuesday: I'm at my work function so Dear Husband will have something from the freezer
Wednesday: Steak and veggies
Thursday: Freezer Bolognese

Monday madness

I'm preparing for a crazy week here, on the back of another crazy week. We have a lot of family visiting for various reasons, so let's see if I can come up for air!



Menu plan (week beginning Monday 2 April)
Monday: Beef stir fry Monday fell apart in a pretty spectacular way, so it was freezer Bolognese.
Tuesday: Slow cooker chicken curry. I plan to make a double batch and freeze one. Tuesday was worse than Monday, so this just didn't happen. We had freezer Bolognese again.
Wednesday: Microwave rissoto. I've found a recipe which claims it's 'impossible to mess up'. Let me at it and we'll see :) I didn't try it. I put on the double batch of chicken curry instead. We got dinner for Wednesday night, one full dinner with rice for the two of us in the freezer, another single serve in the freezer and some extra rice in the freezer.
Thursday: A slow cooker something. I want to try some new slow cooker recipes, so I will see what I can find.

Friday: Chicken stir fry Saturday: Oh my gosh, we've made it to Saturday without having any bolognese! Better have some here. At the last minute we were offered an opportunity to have two nights at the beach, which was way too good an offer to pass up. We packed up quickly, bundled Chubs and all her paraphenalia into the car and headed off. It was glorious.
Sunday: Scavenge Chubs and I were both sick, so on the way home from the beach we went to the medical centre then home via the takewaway shop.

I didn't post a menu plan for the week beginning April 9th. I did bake a cake though - for non domestic me, I think that's pretty impressive! As I said we had lots of family staying, celebration dinners, meals out and the like. Here's the plan for this week:

Monday matters

It was quite an eclectic weekend here. I went wedding dress shopping with a friend of mine which was lots of fun. Two of the other bridesmaids had been doing double duty, since they are bridesmaids for other brides, so I'm sure they were all poofy-dress-ed out by the end of the day. Grocery shopping, some freezer cooking, housework and laundry and I got lots of things crossed off the to-do list. We also visited some family. I got some knitting done while driving. I have a project for the blog coming up in May about knitting, so I'm doing some more prep for that!


Well, last week was a bit of a write-off!
Monday: Slow cooker curry I didn't get the slow cooker on in time, so Dear Husband used the chicken to make a stir fry.
Tuesday: Beef stir fry A bit of a stir fry double up, but no complaints here.
Wednesday: Bolognese from the freezer All good
Thursday: Chicken stir fry I had a chicken curry in the freezer since I made a double batch last week, so I defrosted that which was yummy. Sometimes the sauce separates a bit but it is easily mixed back, and I think the chicken is more tender second time around.
Friday: I have a meeting so I'll just snack and leave Dear Husband to scavenge Dinner was arranged for me at the meeting, and Dearh Husband had a voucher for a free pizza which he redeemed with much excitement.
Saturday: Scavenge We had decided to have beef stir fry, and I made some bolognese for the freezer. At the last minute things changed so we decided to just eat the bolognese. I'd made three serves, so we ate two which left one for another day.
Sunday: Bolognese from the freezer We were planning on having the beef from last night. I had cooked up six serves of fresh bolognese for the freezer, but Chubs wasn't cooperating and again we decided to dig into the bolognese. Still, I got another two dinners for both of us in the freezer, and we'll have the beef on Monday.

This week's plan:
Monday: Beef stir fry :)
Tuesday: Slow cooker chicken curry. I plan to make a double batch and freeze one.
Wednesday: Microwave rissoto. I've found a recipe which claims it's 'impossible to mess up'. Let me at it and we'll see :)
Thursday: A slow cooker something. I want to try some new slow cooker recipes, so I will see what I can find.
Friday: Chicken stir fry
