Monday Menu Plan



Recap of last week:

Friday 27: Ham and veggies

Saturday 28: Bolognese

Sunday 1: Slow cooker Moroccan chicken casserole 
We ended up staying at friends' for dinner, but I'd already put this on, so I put it in the fridge and we had it on Monday night. 

Monday 2: Chili con carne (cook extra to freeze) 
I cooked up the chili on Monday and froze it, but we ate the Moroccan chicken

Tuesday 3: Slow cooker chicken curry 
Monday night's chili 

Wednesday 4: TBA
A friend dropped off some pumpkin soup on Tuesday night which was heartily enjoyed, with leftovers for the freezer for lunches.

Thursday 5: Bolognese 
Deli meat and veggies

Friday 6: Hot chook 
Deli meat and veggies 

Saturday 7: TBA
Freezer bolognese

Sunday 8: Scavenge 
I found some sausages lurking in the freezer, with frozen veggies and mash (using the potato and sweet potato I had bought for the chicken curry and not used) 

This fortnight:

Monday 9: Chicken bol + extra for freezer
Tuesday 10: Slow cooker chicken curry
Wednesday 11: Sausages with veggies and mash
Thursday 12: Chili con carne (from freezer) 
Friday 13: Beef bolognese (from freezer) 
Saturday 14: Ham and veggies
Sunday 15: Scavenge

Wednesday 18: Chicken bolognese (from freezer) 
Thursday 19: Moroccan chicken casserole slow cooker

Slow cooker Moroccan chicken

Well, in short, it was a success!

I used this recipe with some modifications

- 380g of chicken breast instead of 600g of chicken thighs
- 1/2 capsicum
- Half a 400g tin of butter bean instead of lentils
- A slightly different tin of soup, although that's probably a branding thing
- Brown rice instead of couscous
- no coriander

I did sear the chicken in the pan but probably won't bother next time. Hubby thinks that some mixed herbs would help, and I think I could just use one cup of chicken stock. I put in on for five hours on high and it was probably a bit overcooked. I tried to skip the flour because we didn't have any but it really was runny so I went to the shop and got some to thicken it up a bit.

Not sure how it will go if I double it and freeze. We got more than we needed - hubby went back for very rare seconds and there was still a serve left, so if I increased it by 50% we would probably have the prefect size for two servings for our family.

The neighbour even commented on how amazing the smell was which was the first time ever something like that has happened!

Slow cooker chicken curry

We eat this meal about once a week, and we love it. It's easy, fairly cost effective and reasonably healthy, although it probably should have less carbs and more veggies. It does use a packet mix - the only thing that I can make from scratch is an infected mosquito bite.

Ingredients
- 3 chicken breasts, diced
- 4 large carrots, peeled and roughly chopped
- 4 large potatoes, diced. (We leave the skin on, since we don't mind the taste, it's more nutritious and I'm lazy, but you could certainly peel them if you prefer.)
- half capsium (bell pepper), finely diced
- 400g tin coconut milk (not cream)
- packet of slow cooker curry mix



Pour the coconut milk into the slow cooker and mix the packet mix powder in. Cut the chicken breasts and dd those too. Cut the vegetables and add them to the slow cooker. Leave on high for four hours. Serve with jasmine or brown rice.



This makes four very generous portions. I generally make it with fresh chicken so that Deah Husband and I can have dinner for one night, and put another night's dinner in the freezer. I often get a fifth serve depending on how hungry we are.

I know that this isn't a ground breaking recipe, but it works for us and we have it pretty much every week.
